If you experience your mouse jumping around the screen when trying to move it outside of the projection area this is caused because you have the Take Control button unmarked.
If you look in the brown background area of the Desktop Sharing menu your icon will most likely look like this: 
. Please click that icon to make it look like this: 
Your mouse should no longer have any issues with jumping or moving.
